DCB Recipe #8: Chicken & Rice

Here is another super easy and super quick meal that you can make in the Pampered Chef Deep Covered Baker (DCB). We almost always have chicken in the freezer and Rice-A-Roni in the cabinet, so this is perfect for those nights when you are short on time. And of course, you can change up the variety of rice to suit your tastes--we had fried rice last night with a touch of extra teriyaki sauce and it was delish!

Chicken & Rice

4 boneless, skinless chicken breasts (I used tenders)
1 box rice-a-roni

Place chicken in the bottom of Deep Covered Baker; add rice, seasoning mix, then water (amount on the box). Put on the lid and microwave for 25 minutes.

Trivia Night

Twice a year, our school puts together a Trivia team to compete in a Trivia night that benefits a local charity. The Rev and I love competition and the "Music, Movies & More" format that they use in the winter is one of our favorites. Its a great evening with dinner, fellowship with friends and co-workers, some heated competition, and all of the benefits going to the Special Olympics.

Our categories were: Classic Disney animation, "Tom & Sandra" (movies starring either Tom Hanks or Sandra Bullock), Superheroes, Ernest T. Bass, Famous TV houses/scenes/settings, "Must See TV" (shows of the last five years), Board Games, Card Games, Video Games. Audio clues including Famous Cartoon-Character voices and Show Tunes.

We did great, until the whole Ernest T. Bass category. I didn't even know who he was, I was never a big fan of the "Andy Griffith Show." So that category pretty much killed us and dashed our hopes for winning. Maybe next time.

Now, a mini trivia event for you...one of our questions (which we did not know the answer to) was what was Shaggy's (from Scooby Doo) real name? Shaggy was just his nickname. Without using Google, does anybody know the answer? A random prize to the first person that gets it right!

DCB Recipe #7: Lava Cake

If you make this once, I promise that it will become your go-to, in a pinch dessert for all of your dinner parties and potlucks. And it is customizable, just change up the cake mix and icing for many different variations. Devil's Food Cake with fudge icing is one of the Rev's favorites, so of course, I made one for Valentine's Day last week.

Lava Cake

Cake mix of your choice plus ingredients needed to prepare cake (see back of box)
1 can of frosting

Spray Deep Covered Baker with oil. (Once your stone is seasoned, this step is not necessary.)

Prepare a cake mix according to the package directions and pour batter into baker. (I usually mix mine right up in the baker)

Dollop a can of frosting all over the top of the cake batter.

Microwave, uncovered, 11-12 minutes. (If microwave does not rotate, turn ½ way through baking time.)

Scoop into bowls and top with ice cream or cool whip.

Suggested Variations:
Chocolate Covered Strawberry: Strawberry cake mix, Chocolate frosting
Chocolate Fudge: Devil’s Food cake mix, Chocolate Fudge frosting
Chocolate Peanut Butter: Chocolate cake mix, Chocolate Frosting, 1 cup peanut butter
German Chocolate: Chocolate cake mix, German Chocolate frosting
Lemon: Lemon cake mix, Lemon frosting
Sprinkle Fun: Funfetti cake mix, Rainbow Chip Icing
Strawberry: Strawberry cake mix, Strawberry Frosting

but, just in case the folks at your house do...designate a space for "In Use" cups.

Create a special spot on the kitchen counter where everyone can put half-filled coffee mugs that need to be reheated, water glasses to be used again later, or sippy cups that can be refilled. At the end of the day, put everything that's still out into the dishwasher. It cuts down on kitchen clutter, and it also avoids shouts across the house of "Are you done with that coffee yet?"

Boston Cream Pie is Not Just for Yankees

This month's Cake Slice Baker's selection was Boston Cream Pie. Its the official dessert of Massachussets, but this southern gal loves it! I was excited to try it out, and although I would have preferred a little more filling, all in all, I was pleased. A definite improvement over last month's Tiramisu Cake, that is for sure.

Car Caddies

Still working on my sewing skills and doing little projects to ~~test my patience~~ try to improve.

These cute car caddies (tutorial here) were a Valentine for Team Jacie's boys, B-Man and Mater. They love Matchbox cars and Chuggington trains, so these will be a perfect way to tote a few around and have their favorite toys handy in church, at the doctor's office, or on car trips. If I can figure out a version to hold action figures, they will be all set!

100 Calorie French Fries...(or The Day I Ate Barbie Doll Food)

I'll be the first to admit that I am not the healthiest eater, but I do try in some areas. For instance, when we go to McDonald's, 95% of the time, I get a Happy Meal. I still get some yummy goodness, a smaller portion, and a toy for either B-Man or Mater (though it does make me laugh every time the lady asks if I want a "boy toy"...).

Well, apparently (and without consulting me), they changed up the ol' Happy Meal. Now you get your meat choice, apples, and a smaller 1.1oz french fry. There are approximately 15 french fries and a mere 100 calories in 1.1 oz. The container fits in the palm of your hand (see photo, if you don't believe me). When you are finished, you can wash them down with your dixie cup sized drink.

It will probably be the only time in my life that I feel like Barbie......

DCB Recipe #6: Loaded Baked Potato Chowder

This is one of our favorite cold weather meals!

Loaded Baked Potato Chowder

3 baking potatoes (about 2 1/2 pounds)
3 1/2 cups of milk, divided
4 oz. cream cheese, softened
2 tbsp butter
2-3 green onions with tops
4 oz sharp cheddar cheese, grated
1 1/2 tsp salt
1/2 tsp coarsely ground black pepper
Optional toppings such as chopped cooked bacon, sour cream or steamed broccoli florets

Slice potatoes in half lengthwise; place in Deep Covered Baker. Pour 1/2 cup of the milk over potatoes. Microwave, covered, on high 11 minutes. Remove baker from microwave. Move center potatoes to ends of baker and outer potatoes to center. Cover; microwave on high 8-11 minutes or until potatoes are easily pierced with a fork. Remove baker from microwave. Coarsely mash potatoes.

Meanwhile, whisk cream cheese until smooth in a mixing bowl. Slowly add remaining 3 cups of milk, whisking until smooth. Add cream cheese mixture and butter to baker. Microwave, covered, on high 3-5 minutes or until mixture is hot. Slice green onions.

Carefully remove baker from microwave. Grate cheddar cheese over chowder; add green onions, salt and black pepper and mix until cheese is melted. Serve with toppings, if desired.

Note: We like our soup a little bit thicker than this recipe yields, so I have been known to add 1 package prepared Butter & Herb Instant Mashed Potatoes. I think it adds a great flavor and a chunkier texture.

DIY Love Scratch-Offs

So, by now, it is no secret that I enjoy making gifts. I love the personal touch that you can add when you create something to give.

I had first seen this idea for DIY Love Scratch-Off Cards in the most recent edition of Better Homes and Gardens and then saw an even cuter and easier version (pictured) here. I decided to whip up a batch for the Rev (yes, he is probably reading, so they won't be a surprise, but he'll still get the fun of scratching off the cards to see what he has "won").

They were super easy and even you self-proclaimed non-crafters could manage, I promise! You only need cardstock, clear packing tape, metallic acrylic paint, dishwashing liquid and scissors. I love that you can write in your own prize choices, so you can pick the things that you know your sweetie will like the most!

So, now scoot on over here, print out the free pattern, and follow the easy instructions to make scratch-offs of your own for your Valentine!

Blingin' It Out - Part 3

With all of the excitement (please insert sarcasm here..) of the Rev's recent illness, I didn't get the chance to finish out the details of the Pinewood Derby. Sadly, I didn't win, but she sure was pretty when she was all gussied up!

I think I have figured out the secret to success. I've got a year to come up with a more aerodynamic design that I think will run faster....and a year to figure out how to use a saw or something to cut it out from a block of wood....it's probably just as easy as cutting fabric or something, right?

Overachiever...

Yep, I've got an overachiever on my hands...apparently 3 plus weeks of pneumonia, PLUS a cold, PLUS an allergic reaction was not enough...so the Rev decided that he would throw in a little whooping cough.

He is now on his 3rd antibiotic, this time a 14 day prescription, and a new inhaler. The doorknobs stay wet from being sprayed with Lysol and it is a wonder that our hands haven't cracked in two, they are so dry from washing and sanitizer...the only option left is to make him a bubble boy...

Whoever you are, wherever you are, I hope you are staying well!

Leaky door seals can lead to energy loss in both refrigerator and freezer. A door with a faulty seal lets cold air escape, making the unit work harder and cutting food quality.

Check door seals with the "dollar bill" test. Close the refrigerator or freezer door on a dollar bill. A well-sealed door will hold tight to the money; if the bill falls out, or can be slid around easily, it's time to clean or replace the door gasket.

DCB Recipe #5: 10 Minute BBQ Pork Tenderloin

This pork tenderloin, which cooks in the DCB (Deep Covered Baker) in the microwave for 10 minutes and then finishes cooking while resting in the baker for an additional 10 minutes, is perfect sliced and drizzled with my favorite Pampered Chef BBQ sauce, or shredded, sauced and served on mini rolls for super tasty sliders.

10 Minute BBQ Pork Tenderloin and Sauce

1 lb. pork tenderloin
1 tbsp. vegetable oil
2 tbsp. Smoky Barbecue Rub
1 large onion, sliced
Smoky BBQ Sauce (recipe to follow)

Place sliced onions into the bottom of the baker.

Trim fat and silver skin from tenderloin. Brush with oil and rub seasoning onto pork.

Place into baker on top of onions, tucking narrower end under to create a uniform thickness. Cover and microwave on high for 10 minutes or until internal temperature reaches 150.

Remove from microwave, keep it covered for 10 minutes allowing the temperature to rise to 160.

Top with Smoky Barbecue Sauce and serve as main dish, or shred meat and use in sandwiches.

Smoky BBQ Sauce

1 cup ketchup
2 Tbsp Smoky Barbecue Rub
¼ cup brown sugar
2 tsp cider or white vinegar

Combine ingredients and enjoy!

Super Bowl Fun

Well, I told you all about the Rev's illness yesterday, so sadly we will be having a Super Bowl party for 2 at the house on Sunday, since we are trying to avoid germs. The good news is that he is amped on the 'roids, so he'll definitely be in the mood for some yummy game time munchies--maybe some Monkey Brains, or some baked chicken wings, I don't know yet, but we'll eat some sort of fun, little food--I love appetizers!

And, because even sick, the Rev is always up for some friendly competition, we'll play this Commercial game that we played last year. Print it out and have fun with it at your party!

Life Lately....

has pretty much looked like this...well, this and wads of used Kleenex, doctor co-pays, and a husband who has grown a grizzly bear beard.

The Rev is on week 3 with pneumonia and it has been pretty miserable around here....for everyone. Week 1 was plain, old pneumonia. By week 2, I guess he decided that wasn't enough fun, so he added in a cold. Week 3 rolled around and he decided to up the ante even further and add in some sort of allergies. He is having a hard time getting well, which I don't understand at all, since he has enough antibiotics and steroids in his system to kill even the resistant mold that lives in the cracks of the bathtub.

I've been relegated to the spare bedroom so that I can stay well, my DVR is backed up with my shows since he is either watching TV or playing PS3 while he rests, and there is a permanent Rev sized butt print in the loveseat. And to top it all off, the poor fellow is going to have to drag himself out of bed tomorrow to perform his 2nd funeral in the 3 weeks since he got sick. It has to get better soon, right?

P.S. FYI, If you are looking for sympathetic, willing-to-help-the-sick type of people, they do NOT work at the WalMart pharmacy......

A few weeks ago, Janette surprised me with a beautiful scarf in the mail! We had been going back and forth about scarves and I am afraid that I might have sparked an obsession with her...apparently, she saw the scarf on Pick Your Plum and thought of me!

Keep the clothes in your closet from taking over...

Tip #153

by using this simple trick to purge never worn items.

Start each year with all of the hooks on your hangers facing out (towards you). After you wear an item, turn the hanger around, so that the hook faces the back of the closet. At the end of the year, take stock of any item that hasn't been worn (they'll be the ones whose hooks are still facing you) and get rid of the items that you didn't wear. Then, you'll have empty hangers and an excuse to shop...you can thank me later....

DCB Recipe #4: Rocky Road Brownies

This week, a sweet treat for you! And again, you guessed it, you can make it in your microwave in the DCB...

Rocky Road Brownies

1 c walnut halves, toasted
3/4 c all-purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
3/4 c butter (1 1/2 sticks)
4 oz unsweetened chocolate
1 1/2 c sugar
3 eggs
16 large marshmallows
20 milk chocolate kisses, unwrapped
Vanilla ice cream (optional)

Coarsely chop walnuts and set aside. Combine flour, baking powder and salt in a small bowl. Cut butter into pieces and chop unsweetened chocolate; place butter and unsweetened chocolate into a microwave safe bowl and microwave, uncovered, on HIGH 1-2 minutes or until mostly melted, stirring every 30 seconds.

Add sugar and eggs to chocolate mixture; whisk until smooth. Fold in flour mixture and 1/2 cup of the walnuts until incorporated. Pour batter into Deep Covered Baker, spreading evenly. Microwave, uncovered on HIGH 5-7 minutes or until wooden pick inserted in center comes out clean and edges are firm. Carefully remove baker from microwave using oven mitts.

Meanwhile, snip marshmallows in half crosswise using. Top brownie with marshmallows, chocolate kisses and remaining 1/2 cup walnuts. Microwave, covered, on HIGH 1-2 minutes or just until marshmallows start to soften. Remove baker from microwave. Let stand, covered, 5 minutes. Spoon onto plates; serve with ice cream, if desired.

the Dark Chocolate filled doughnut is back at Krispy Kreme now through March 11th. I am giddy and I need one now. If you were here and I had an extra, I would think about sharing.

Sadly, we have no Krispy Kreme here, so I'm heading into the kitchen to eat a spoonful of frosting out of the can and pretend it is a chocolate filled delight.

DCB Recipe #3: Breakfast Hashbrown Casserole

We had breakfast for dinner last night...it took 13 minutes and was all done in the microwave in my Deep Covered Baker (DCB). Here is the recipe, in case you want to try it! (this made plenty for us, with leftovers for the Rev.)

Breakfast Hashbrown Casserole

1/2 bag of thawed frozen hash browns
1/2 lb breakfast sausage (can also use bacon or ham) (I used pre-cooked Bacon bits, from the salad dressing aisle)
1 1/2 cups Colby/jack cheese (or cheese of choice)
diced up veggies (whatever you like best)
8 eggs
salt and pepper to taste

Cook the sausage in a skillet and drain. Crumble the hash browns in the bottom of the Deep Covered Baker. Top with cooked meat and diced veggies, then 1 cup of shredded cheese of choice.

Beat eggs in a small bowl, adding salt & pepper to taste. Pour over cheese, and add additional ½ cup of cheese on top of eggs. Cover and place in microwave.

Cook on high for 13 minutes. Serve with sour cream and salsa if desired.

Tiramisu Cake = Epic Fail

I was never really excited about this month's Cake Slice Baker's selection, a Tiramisu Cake. I'm not a coffee person, so a cake soaked in coffee does nothing to excite me. Add to that the bajillion steps and I was dreading it.

I'd like to tell you that I was surprised by how easy and delicious the cake was, but it was neither. The cakes turned out rubbery and I thought the mascarpone cheese mixture had a very strong, unpleasant flavor.

The only thing that made me feel better was many others who made it saying they thought it was gross, too. Better luck next month!

A recent study showed that 62% of dishwashers harbor mold, yeast, and other types of fungus. Twice a week you should clean the seal around the door with a disinfectant wipe--this area is where fungi are less likely to be killed by detergents and high temps.

DCB Recipe #2: Ravioli "Lasagna"

Here's another super quick and easy recipe that I came up with for the Deep Covered Baker (DCB)! Again, you could easily adapt this by cooking in a casserole dish in the oven, if you don't have a DCB.

Ravioli "Lasagna"

1lb. ground beef
1/2 tsp. garlic powder
1/2 tsp. Italian seasoning
1 Tbsp. minced dried onion
1 large jar spaghetti sauce
1 bag (24oz.) frozen cheese ravioli
1 cup shredded mozzarella cheese

Place ground beef in the DCB and sprinkle with seasonings. Cover with lid and brown in the microwave for 7 minutes, stopping midway to crumble beef and stir. Remove from DCB, drain, and set aside.

Spread 1 cup of spaghetti sauce in the bottom of the DCB, top with 1 cup of the browned ground beef, and 1/2 of the ravioli.

Repeat layers once. Top with an additional 1-1 1/2 cups spaghetti sauce.

Cover and microwave for 14 minutes. Remove from microwave, top with cheese, cover and let stand for 2-3 minutes, until the cheese melts.

Enjoy!

Gardening 101

I feel sort of bad giving him a hard time because he is super sick with pneumonia right now, but this one is too good to pass up.....

So, you all know that the Rev is, well, a reverend, you know a pastor. He preaches about 50 sermons and teaches about the same number of Bible studies each year. Now, put somebody in charge of speaking publicly that many times in a year and a slip up is bound to occur every now and then....

This past Sunday's sermon involved an illustration about gardening. The Rev was trying to point out to our rural congregation that he was not a city boy and had in fact been raised in the country, farming and gardening. I know what he was trying to say, I know the point he was trying to make....but right in the middle of his story, he said "I've spent plenty of time with a ho(e)".......I immediately had to look at the floor because I was getting tickled, and several others were as well. He paused and I cringed hoping he wasn't going to acknowledge it, just keep going like it didn't happen, thankfully he let it pass, but we weren't even finished with service for a full minute before I busted out laughing and I wasn't alone. He has taken his fair share of ribbing about it this week, but he's a pretty good sport.

It was almost as funny as the time he was preaching about Lot, got tongue-tied and the phrase "pitching a tent" came out as pinching something that you don't want to even think about pinching in church.....I'll give you a minute on that one....

And people think church is boring......

If you are like me and you clean out and purge at the beginning of the new year....

Tip #150

don't forget to clean out your beauty products.

Remember that all of your makeup has a shelf life, just like other products. Here is a general rule of thumb:

Mascara: shortest shelf life of all of your cosmetics, since the wand carries bacteria back into the tube each time you use it; replace every 3 months.

Creams (including, shadows, blushes, concealers, foundations, and glosses): most of these products contain a lot of water, which also makes them a magnet for germs; replace every 6 months.
Powders and sealed, unopened makeup: Low moisture in powder and unopened products (which should be stored in a cool, dry place) means that they are good to go for 2 years.

Lipstick: Unless it begins to dry out, you are good to go for up to a year

To chronicle our life away from the city and our friends and family when we moved. And to make new friends.

DCB Recipe #1: Cream Cheese Chicken Chili

I love Pampered Chef and have accumulated quite a few of their kitchen cooking tools. Their Deep Covered Baker (DCB) is amazing! It is a stoneware piece that can help you whip up dinner in minutes in the microwave or traditional oven. I'm challenging myself to cook in mine at least once a week in 2012, so I'll be sharing 52 recipes with you! Don't have a DCB? Don't worry, you could easily adapt any of these recipes for traditional cooking methods...or you could always host a Pampered Chef party and earn one, that's how I got mine!

Cream Cheese Chicken Chili

1 can black beans, drained and rinsed
1 can corn, undrained
1 can Rotel, undrained
1 package ranch dressing mix
1 tsp cumin
1 Tbsp chili powder
1 tsp onion powder
1 8 oz package light cream cheese, cut into cubes
1lb. chicken breasts or tenders

Season chicken with salt and pepper. Place in DCB, cover, and microwave for 6-8 minutes, until fully cooked. Remove from microwave and shred chicken, leaving it in the bottom of the DCB.

Pour can of corn (undrained), rotel (undrained), and black beans on top of chicken. Top with seasonings and ranch mix. Stir together. Place cream cheese on top. Cover with lid and microwave for an additional 8 minutes.

Stir to combine cream cheese into chili. Serve with baked Scoops and garnish with cheese and sour cream, if desired.

2011 Review Extravaganza - Q4

Sadly, the 2011 Review Extravaganza and another year are coming to a close. A big THANKS to all of the wonderful hostesses of this walk down memory lane!

In October, I showed you how to make Edible Halloween Jewelry, linked up my first cake creation as a member of the Cake Slice Bakers, and forgot to show you Mater's Smurfday Cake--my little buddy turned 2!

In November, I told you how to read magazines and help a good cause, shared some amazing Snickerdoodle Chex Mix, and told you all about our phone scam.

In December, I shared the yummiest, easiest fudge ever, lamented my inability to beat the Rev in our Fantasy Football league, and forgot to photograph or show you the B-Man's Scooby Doo cake--he is my favorite 6 year old!

Can't wait to see what is in store for 2012!

2011 Review Extravaganza - Q2

I'm joining up with all of the girls for another week of reviewing some of 2011's best. Up this week is April, May, and June.

In April, I attempted Homemade Cadbury Cream Thingys and was forced to fess up that for a change The Rev Was Right.

Oh Fudge!

So, a few weeks ago while browsing through blogs, I came across this post, all about frosting fudge. I had never heard of such and couldn't even believe that you could make fudge with just 2 ingredients and really in all of about 5 minutes.

But I have seen the light! This stuff is crazy easy and insanely good. I made the featured Peanut Butter Ritz White Chocolate version. It tastes like those yummy White Chocolate Covered Peanut Butter Ritz Crackers without all of the hassle. Want to make your own?

Peanut Butter Ritz White Chocolate Fudge

1 bag white chocolate chips
1 can vanilla frosting
2 cups Peanut Butter Ritz Bits

Melt chocolate chips.

Stir in the frosting.

Stir in the Ritz Bits.

Spread in a lightly greased or wax paper lined pan.

Chill for 30 minutes. Cut into squares.

Enjoy!

Silent Night

Snickerdoodle Chex Mix

Just in case you need a quick, little snack to tide you over until the turkey's done!

Snickerdoodle Snack Mix

1/4 cup sugar
1 teaspoon ground cinnamon
2 cups Cinnamon Chex cereal
2 cups Chocolate Chex cereal
4 cups popped popcorn
1/4 cup butter or margarine

1. In small bowl, mix sugar and cinnamon; set aside. In large microwavable bowl, mix cereals and popcorn.

2. In 1-cup microwavable measuring cup, microwave butter uncovered on High about 40 seconds or until melted. Pour over cereal mixture, stirring until evenly coated.

3. Microwave uncovered on High 2 minutes, stirring after 1 minute. Sprinkle half of the sugar mixture evenly over cereal mixture; stir. Sprinkle with remaining sugar mixture; stir. Microwave 1 minute longer. Spread on waxed paper or paper towels to cool. Store in airtight container.

Creamy Pumpkin Cheesecake with Ginger-Pecan Crust

This month's Cake Slice Baker's recipe would be a perfect addition to your Thanksgiving table. I'm not a big fan of pumpkin, but even I have to admit that the mixture tasted pretty good. And I have been eating the Sugared Pumpkin Seeds that you garnish the cheesecake with by the handful!

The sides of my cheesecake didn't come out as smooth looking as I would have liked, so I opted to press the pumpkin seeds all the way around to disguise that a little bit.

The recipe is lengthy, but not difficult. Since it has so many steps, I am posting a link to the recipe in printable format.

If you accidentally machine wash a sweater that calls for hand washing and it shrinks, soak the incredible shrinking sweater in a sink full of cool water and 1/4 cup hair conditioner for 30 minutes. A common chemical found in conditioner will relax and soften wool and cashmere fibers, returning the sweater to its original size. After soaking, gently rinse the sweater, roll it in a clean towel to absorb moisture, then lay flat to dry.

Edible Halloween Jewelry

We don't do much for Halloween, but working in the schools means you need fun accessories for every holiday--anything for the kiddos. What better way to celebrate the biggest day for candy, than by making a necklace that will have everyone drooling!

This is so simple that I feel silly giving you step-by-step instructions, but here's the gist.

1. Go to the $ store and get candy of your choice, cellophane, and ribbon.

2. Make a cellophane tube--I used a little clear packing tape to secure mine.

3. String ribbon through--make sure it is long enough to tie your necklace off at the desired length.

4. Add your candy, tying each piece off with additional ribbon.

5. Curl your ribbon all pretty.

6. Get ready to deal with the jealousy over your jewels and your insane crafting skills!

Apple Cake with Maple Frosting

Recently, I became a member of the Cake Slice Bakers, a group of bloggers with a love for baking. We all purchase the same cookbook, and vote on a cake to bake from it each month. Then we share with you! I've been excited about baking this cake ever since it won the vote. It is like fall in a cake pan...the house smelled incredible while it was baking. And don't even get me started on how good the Maple Cream Cheese frosting is! I baked this as recommended in a 9 inch square pan, but I think it would make great cupcakes, as well. Happy Baking!

Apple Cake with Maple Frosting

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup firmly packed light brown sugar
1 teaspoon vanilla extract
2 large eggs
2/3 cup buttermilk
1 cup chopped walnuts
2 cups peeled and chopped (1/2 inch pieces) Granny Smith apples
Cream Cheese Maple Frosting (see below)

1) Position a rack in the center of the oven and preheat the oven to 350 degrees F. Grease the bottom and sides of a 9-inch square baking pan. Dust the pan with flour. (I cheated and used Baker's Joy spray)

2) In a medium bowl, whisk together the flour, baking powder, cinnamon, ginger, baking soda, and salt; set aside.

3) In the bowl of an electric mixer, using the paddle attachment, beat the butter at medium speed until creamy, about 1 minute. Gradually add the sugar and beat at medium-high speed until well blended and light, about 2 minutes. Add the vanilla extract, then, add the eggs one at a time, beating well after each addition and scraping down the sides of the bowl with a rubber spatula as needed. Reduce the speed to low and add the flour mixture in three additions, alternating with the buttermilk in two additions and mixing just until blended. Remove the bowl from the mixer stand and stir in the chopped apples and walnuts (I used pecans instead).

4) Scrape the batter into the prepared pan and smooth the top. Bake the cake for 25 to 30 minutes, until it is golden and a toothpick inserted into the center of the cake comes out clean. Cool the cake completely in the pan on a wire rack.

5) Frost the top of the cooled cake with the maple frosting. Cut the cake into squares and serve it directly from the pan.

6) Store the cake in the refrigerator, loosely covered, for up to 3 days. Bring the cake to room temperature before serving.

Cream Cheese Maple Frosting

6 ounces cream cheese, softened
3 tablespoons unsalted butter, softened
1/2 teaspoon vanilla extract
1/8 teaspoon maple flavoring
1/8 teaspoon ground cinnamon
1/8 teaspoon ground ginger
Pinch of freshly grated nutmeg
Pinch of salt
1 cup confectioners’ sugar, sifted

1) In the bowl of an electric mixer, using the paddle attachment, beat together the cream cheese and butter at medium speed until smooth. Beat in the vanilla extract, spices, and salt. Reduce the speed to low, add the confectioners’ sugar, and beat until well blended. Raise the speed to high and beat until light and creamy, about 2 minutes.

Making a List...with T-Pain

I confess...that today begins a 3 day weekend...I love Fall break.

I confess...that the Rev has begun begging for a Christmas list...he's been making his for weeks now.

I confess...that if it weren't for the ridiculous $40 price tag, I'd totally put this T-Pain microphone on my list. Oh, the fun I could have answering the phones and hollering out chores for the Rev with this...

I confess...that its much more likely that I'll put new Rubbermaid containers on the list...I'm tired of trying to scrub out the stains.

I confess...that I am cooking a pot roast tomorrow just so that I can peel some potatoes with the nifty little palm held peeler that the bestie got me after she heard me talking about one...does this make me a dork?

I confess...that we have a whistler in the office and it has made me realize just how annoying whistling is...if you aren't trying to hail a cab, don't whistle...

I confess...that the besties are torturing the B-Man with a trip to Chapel Hill to see the ~~Tarholes~~ Tar Heels...I feel sorry for him...but not for us because that means that Uncle Rev and Aunt Stacie get to have Mater spend the night!

I Can Always "Count" On Target...

I got home and promptly realized that we had no milk…

It was 3 days before we went to the store again and then I got a stomach bug, so my fix has been delayed…

In other news, the milk is fat free, so that makes the cereal practically nutritious…right up there with broccoli and brussel sprouts…but without the gagging…

P.S. Can I just tell you how great it was that more than one of you offered to send me Count Chocula when I whined about not being able to find any last week? You guys ROCK!!

Count Chocula & Dog Treats

I don't like leftovers, but the Rev does and I don't want him getting sick.

Leftovers need to chill fast enough to prevent dangerous amounts of bacteria from growing. Putting them in a large container isn't the best idea. Instead, transfer extras to containers that are 3 inches deep max and refrigerate fast!

Are We Getting Old?

The Rev and I have found ourselves asking questions and responding to situations lately in a way that is making us ask….Are we getting old?

We were almost out the door for our anniversary getaway a few weeks ago, when the Rev had to go back in the house for his vitamins, blood pressure meds, and anti-gas pills…

The very next day, he was complaining about how he had hurt his thumb…opening his blood pressure meds…

It just happened to be Hot Rod Weekend in Gatlinburg, so the crazies were out cruising. My response when I saw 2 boys riding in a flat bed truck, in their lawn chairs, that were tied to the floor of the truck with a rope-- is that safe?

Same response, a day later when we saw a group of teenage cheerleaders trying to attract attention to their car wash, by doing dangerous stunts…on the concrete sidewalk…

Smoking or Non-Smoking Section?

That is the Rev's daily question for the last week, ever since I developed the most bizarre medical thing I have ever heard of. For the past 11 days, I have been smelling cigarette smoke where there is none. I'm not just talking about a whiff here, I mean a strong, constant smoke smell, like you would smell if someone were holding a lit cigarette under your nose, 24/7. My eyes water like I am stuck in a smoke filled room and my throat is all scratchy.

Of course, Dr. Rev googled it and said get to the Dr. since the causes can range from a sinus infection to Alzheimer's to schizophrenia (he was leaning toward the latter and I am starting to feel a little crazy, at this point!). Nice. The Dr. did give me an antibiotic, just in case I had any sort of sinus infection, with instructions to come back if the smell persisted after I finished the meds. Unfortunately, the meds are finished and the smell is there, still as strong as ever. I know a Z pack keeps working for 5 days after you finish taking it, so I am holding out hope that maybe by then, the smell will have gone away.

The condition as far as I can tell from everything that I have read is called phantosmia, or olfactory hallucinations. Basically, some type of brain injury, even one that you may be unaware of, like a stroke or seizure, tricks the brain into thinking that it smells something that is not there. Some people are able to use nasal sprays to trick their system, while others have to have their sniffer snipped, basically unable to smell anything!

Anybody out there ever heard of this or know anybody who has dealt with it?

The first and last hours of sun during the day (the times right around both sunrise and sunset) have a brilliant quality to the light that can yield great photos. The soft, golden light around this time is best for bringing out the reds and golds in your photos.

I confess...that we had a great anniversary getaway last weekend. I'm thinking about keeping the Rev around for at least another 7...

I confess...that while on this getaway we stumbled upon the Rev's dream store. It was called All Sauced Up and was like a huge condiment emporium, with tons of free samples. Have I ever told you that the Rev likes to go to Sam's Club for free "appetizers" and trolls the mall food court for the same? The boy loves a free sample.

I confess...that I have almost forgiven the Rev for spankin' my tail in Fantasy Football on our anniversary...almost...

I confess...that we're totally hooked on the new show Revenge...this is the kiss of death...every time we like a show, it gets cancelled, so watch it if you want, but you've been warned...

Chicken Alfredo Bubble Up

Here is a yummy little casserole that we tried recently. I halved the recipe and made it in an 8x8 pan. Of course, you can make a whole recipe, if you need to to feed your fam! I'm going to change it up with pizza sauce and pepperoni as the main ingredients next time.

Chicken Alfredo Bubble Up

2 cans　(16.3 Oz. Size) Grands Biscuits
1 pound　Jarred Alfredo Sauce
½ teaspoons　Garlic Powder
½ teaspoons　Garlic Salt
1-½ teaspoon　Italian Seasoning
1 pound　Chicken, Cubed And Cooked
2 cups　Mozzarella Cheese, Divided

Preheat oven to 375ºF.

Cut each biscuit into 6 pieces and place in a bowl. Toss biscuits with Alfredo sauce, garlic powder, garlic salt and Italian seasoning.

Add chicken and half of the cheese. Toss until well blended.

Spray a 9″ x 13″ in pan with cooking spray. Pour biscuit mixture into the pan and top with remaining cheese.

Bake at 375ºF for 25-35 minutes or until biscuits are done. Make sure the middle is done!

You shouldn't store eggs in the refrigerator door, because every time the door is opened, the temperature fluctuates affecting the freshness and safety of your eggs. The best place to store them is in the original carton, on a middle shelf in the refrigerator.

I confess…that for the past few weeks, I have been way too busy to confess. Life has pretty much been sleep and work. But the first 3 weeks of school, which are the busiest for my particular job, are behind me, so hopefully things are about to settle down.

I confess…that having said that, I am REALLY excited to have a 3 day weekend!

I confess…that it makes me sad that we are on the last white shoe weekend. Dumb fashion rules! I might just break the rules, just for kicks, ya know? And if that streak of rebellion is successful, I might tear some tags off pillows and mattresses next…get the bail money ready, kids!

I confess…that $250,000 would not be near enough to convince me to share The Bachelor Pad with Vienna and Kasey. Seriously, are there 2 more annoying people on this planet???

I confess…that I have an obsession with Googling songs that I hear on various TV shows and adding them to my mp3 player. I’m usually surfing while I watch TV, so I just plug lyrics into Google and find out what is playing. My latest find is The Civil Wars, not the war of Northern Aggression, but the progressive bluegrass duo. Not my usual cup of tea, but they have a very mellow sound and great harmony.

I confess…that the Rev has left his free-wheeling, carefree days behind and turned into Fuddy Duddy Rev. Here’s hoping that he finishes his Master’s degree in record time…

I confess…that the most exciting thing about this long weekend is the official kickoff to the most wonderful time of the year…that’s right, South Carolina Gamecocks football begins on Saturday!! Bring on the wings, tailgating, and hopefully, a winning season!

So, we had a little earthquake here on the East Coast yesterday--a 5.8 on the Richter scale actually. Apparently, it originated in VA and the aftershocks reached several states, including us here in NC. It was the weirdest feeling, almost like God just picked the school building up and gave it a little shake like you would a snow globe.

And then…because it was still about an hour before school let out for the day, the phones went nuts! No damage to anything in our area that I can see, and about 15 seconds max, but enough to send parents into a tailspin, wanting to know if school was letting out early…usually I at least get a break until the first cold rain or snow flake falls, but not this year, only 6 days in and already it has begun.

Dear winter weather, please wait as long as you can..."Are you closing early?" is the most annoying question...ever...

Get organized and cut down on unnecessary steps...

For years, I had all of my cleaning supplies in one location, this creates extra work. Try storing cleaning products in the actual room that you use them in--toilet cleaner in the bathroom, stain stick in the laundry room, wood polish in the dining room hutch. You'll clean out the probably over crowded under-the-kitchen-sink cabinet and keep your products in their more logical location.

Got Expired Coupons?

Are you caught up in the coupon craze? I have to admit that I really need to do a better job of clipping and saving. What about the coupons that are for products that you don't use or the ones that expire on you before you can use them. What do you do with those? If you are like me, you probably just trash them.

How about donating them to an overseas military base instead? Overseas Coupon Program is a volunteer based organization that helps those of us living in the states connect with foreign military bases to provide an outlet for coupons, which can be used by overseas military families up to 6 months past expiration. Being stationed abroad usually means higher living expenses, so this is a great way to give a little back to those serving our country. The program does have some guidelines to follow, but they aren't hard and following them will save time when the coupons do reach the bases.

You'll get rid of those coupons that you don't plan to use and help out a member of the service as well!

but this household item can help. After washing your car, use a dampened cloth to remove any bugs from the grille of your car, then lightly coat the metal with cooking spray, wiping away any drips. The spray will create an invisible slippery shield that will prevent bugs and other residue from sticking.

She's Not Hurt, Just Fat...

So, about 2-3 months ago, our little Scarlett developed an annoying habit. We have always let her on the furniture--while I love my stuff, she is family, and I just don't get making her stay down on the ground away from us, laying in some little bed. She sleeps with us and she is welcome to jump on the couches whenever she wants. Most nights, we all hang together in the living room and she is either sitting with the Rev or me. But she started having trouble jumping up on the couches and wouldn't even try to jump up on the bed. She would try and try and I thought she was just being dramatic. Once or twice, she even yelped and seemed to be favoring a leg after trying to jump. But the leg didn't seem tender when you touched it and otherwise she was fine. And for the most part, even though it took a few tries, eventually she would manage to jump up onto the couch. We kind of just thought that's weird, but didn't really make much of it.

Fast forward a few months, and we visit the vet for her checkup. The Rev brings her home, with this diagnosis--she's not hurt, just fat...say what, I know the vet did not send my kid home with a book about being chubby?!?! We feed her less food than the bag specifies and she doesn't eat any extra food, no people food, no scraps and except for the occasional rawhide chew, no treats. I mean she's not the most active, but really, my little heifer can't jump because she is about 3 pounds overweight. Have we failed as parents? Are the other dogs at the dog park gonna make fun of her? Will we have to scratch out the "Diva" on her food bowl and replace it with "Chubby"? We've cut her back on the food, which leads to the saddest look on her face. I'll keep you posted...

P.S. She's still pretty stinkin' cute!

Drink plenty of water regularly and often, even if you do not feel thirsty. Attempt to stay hydrated. Limit intake of alcoholic beverages, which can actually dehydrate your body. And eat well-balanced, light, regular meals, being sure to avoid high protein foods that increase metabolic heat.

I confess...that it is noon and I just woke up. As much as I would like to say I was just enjoying a great dream, that is not true.

I confess...that I was sleeping in because I am wrapping up week 2 of a wicked summer cold.

I confess...that I feel OK during the day only to cough my head off all night. It really sips! I mean who has a cold when it is 100 degrees outside?

I confess...that the 10% alcohol in the Nyquil may not be cutting it. I might need something harder. I wish you didn't need a prescription for snake oil anymore...

I confess...that on top of all of this, my nice brown tan from the week at the beach waited a week before peeling. I am destined to be pale, I must accept this.

I confess...that this is my last week off and Monday will mean a 5:30 alarm clock for the first time in a month.

I confess...that I miss summer vacation already!

I've also been known to forget this tip and end up with a tiny sliver of glass in my foot. Sharing this one, so I can spare you...

After sweeping up the larger pieces of broken glass that you can see, use a piece of sandwich bread or a small ball of play dough to press along the area and catch any small slivers that the broom didn't catch.

Once on a Sunday night, we thought we were going to church, as usual, until our Mom drove straight past the turn off for church and to the coliseum, where she surprised us with tickets to that night's wrestling show. 1. We never missed church and 2. my Mom was a single parent, so I know how much she sacrificed for those tickets. Deep breath, yes I grew up a wrestling fan...and I still watch it. No judging me, kids!

here's how to keep it looking new.

If you've been in the ocean, soak your suit in cold water for 15 minutes before washing in a gentle cycle or by hand.

Never put your suit in the dryer. Instead roll it in a towel to soak up extra water--wringing it out can stretch and pull--then, let air dry in the sun.

Be sure to throw your suits in the washer one last time when the season ends, to make sure there is no lingering chlorine or salt water in the fabric.
